It’s been a year since the Game of Thrones series finale aired. Save your feelings about the success (or failure) of the final season 8, as this is not the time for it. (Additionally, the next sentence contains a major spoiler so if you haven’t watched the series finale, leave now.)

And how are we going to celebrate? With Sansa’s lemon cakes of course! Lemon cakes are her favorite. It’s the perfect occasion. Let’s begin, shall we?
- 3 or 4 lemons
- 1 cup of water
- 1 cup of sugar (or ¾ cup if you don’t want your lemon slices too sweet)
- Vanilla extract
- 1 box of lemon cake mix
- 12-muffin baking tray
- Small pot
- Measuring cups
- Cutting board
- Parchment paper sheets
- Ice cream scoop
- Cookie tray
Start with the Lemons
You will complete this part 24 hours before the actual baking begins. Therefore, if you are planning to make these lemon cakes for guests, make sure to plan a day ahead of schedule.
Step 1: Cut up your lemons into slices
Don’t cut them too thin so they might break when you simmer them in the pot.
Step 2: Add 1 cup of water and 1 cup of sugar into the pot
If you don’t want your lemon slices to become too sweet, you can decrease the amount to ¾ cup of sugar.
Step 3: Add the lemon slices into the pot and heat them up
Allow the lemon slices to simmer in the heat for five minutes. Set yourself a timer so you don’t forget to turn the heat off when it’s time.
Step 4: Put down two sheets of parchment paper
You want to dry the lemon slices on them.
Step 5: Remove the lemon slices from the pot
The lemon slices have now softened and sweetened. Due to their delicate state, carefully use your tongs to remove the slices from the pot. Allow the slices to dry.
Now the Cake part
Step 6: Set the oven to preheat at 325 degrees Fahrenheit
Step 7: Grab your lemon cake mix
Follow the directions on the lemon cake mix box to make your lemon cake batter.
Step 8: Place the lemon slices into the muffin tray
Use the tongs to carefully place each lemon slice inside each “muffin.”
Step 9: Pour the batter into the muffin tray
When your lemon cake batter is ready, use an ice cream scoop to pour about 1.5 ounces of batter into each “muffin” on the muffin tray. You’ll have excess batter so if you’re preparing for multiple guests, grab another 12-muffin tray!
Step 10: Bake for 15-25 minutes
Watch your cake batter. Make sure they don’t get too brown!
Step 11: When ready, remove the tray and flip the cakes
Carefully pull the tray out of the oven. And then, flip the cakes immediately onto the cookie tray lined with parchment paper. Allow the cakes to dry for five minutes.
Step 12 (Optional): Trim the excess “bottoms”
If any of your cakes have expanded too much, use a knife to slice off the excess “bottoms” so that your cakes will sit flat. The lemons should be on top.
